Ultegra 11s to 12s - rim brake

I have a 2020 Canyon Endurace, Ultegra R8000 Rim Brake that I very much enjoy, and unless the frame breaks, I do not really see myself buying another bike.
But more and more I wish to have Di2 and 12-speed, hence this thread.
The upgrade kits I have seen so far all come with the rim brake callipers. Does that mean I wouldn't be able to use my current ones?
Ideally I would like to only buy the Di2 shifters, battery, cabling/electronics, both derailleurs, 12s cassette and chain (plus I would like to change my crankset of 172.5mm to a 165mm one).
Any suggestions on the most economic way to do it all?
And what do you think the value of Ultegra R8000 parts I would be replacing could sell for these days?
